The History of Shichimi Togarashi
Shichimi Togarashi is a famous Japanese spice blend typically used to flavour ramen noodles and soups. Sprinkle it into the soup while you are making it and add more once you've served to spice your noodles to perfection. Shichimi as it's also known is a 7 ingredient mix from Japan. It's main ingredient is chilli powder, making it the ingredient of choice when adding a kick to Asian cuisine. Tograshi is the Japanese word for Capsicum Annuum (Chilli), apt for its prominence in this mix. A 17th Century creation, in Japan, Shichimi Togarashi is also known as Yagenbori, a nod to its original place of manufacture.
About the producer
As we realised that users might wonder how an British company with African roots became involved with such a spice mix, here's a little explainer of how our we became involved with this awesome infusion. Over the past 5 years, Chilli Mash Company has commercially produced spice mixes and sauces for Japanese restaurants up and down the country. During the first COVID-19 lockdown of 2020, Japanese made togarashi became almost impossible to purchase in the UK. In order to keep our customers supplied with their flavourings, we set about creating our own Shichimi Toagrashi spice mix. Delving deep into the recipe books, we set about mimicking the togarashi we usually sourced from Japan directly. Over the course of many months, we perfected this Togarashi spice mix. In total, just 7 spices are used. Whilst we thing this mix is really close to that produced in Japan, we really would love your feedback.
