Ginger (Tangawizi) is a very popular spice used worldwide often used to spice up your meal or pounded for use as a medicine. The demand for this product, especially the more pungent wild African variety is a growing trend worldwide. Fancy doing something a little different? Why not make a root beer or candied ginger. Candied ginger, known in the U.K. as "stem ginger", is made from cooked root. Boiled in sugar until soft, and then used as a type of confectionery. Fresh, it is usually peeled before eating. For longer-term storage, it can be placed in a plastic bag and refrigerated or frozen. A fragrant kitchen spice, they are often pickled in vinegar or sherry as a snack. They can also be steeped in boiling water to make ginger herb tea (See our Tangawizi Tea), delicious when honey is added. As well as these ideas, one can also juice the roots to use as a seasoning for Indian, Chinese, Korean, Japanese, Vietnamese, and South Asian cuisines. A flavouring for dishes such as seafood, meat, and vegan/vegetarian dishes. If you are a little more intrepid, why not try drying the fresh roots, which can be substituted into recipes at a ratio of six to one. One can also powder dry ginger root to be used as a flavouring for baking such as gingerbread, cookies, crackers and cakes. It can also be used to make ginger ale, and ginger beer.
