Red Bird Eye Chilli Puree is a delicious, hot chilli puree that can be used in cooking to replace fresh chilli, or in moderation as a condiment. This product is made using our own grown finest Rwandan Red Bird Eye Chillies, fermented for up to 12 months and full of flavour!
Our Mashes & Purees
As our name implies, chilli mashes & purees are our signature product. Chilli Mash Company was founded to provide a high-quality source of chilli puree to the sauce manufacturing industry.
Until our inception in 2016, the only chilli mashes, pastes & purees available in the UK all had unwanted ingredients. These ingredients ranged from citric acid to acetic acid. They also had a very high percentage of salt, with some of them being 14% salt.
Our mashes are unapologetically simple and are made using only 3 ingredients - the chilli itself - in this case Red Bird Eye Chilli (which is 87% of the product), Cider Vinegar (Our cider vinegar is made bespoke for us at a local cider farm and contains no added sulphites) and salt (never more than 5%).
Most of our purees (including this one) begin life as a simple fermentation. This process produces a natural acidity.
